- Rinse and pat dry the salmon fillets gently.
- Wash the zucchini and bell peppers. Slice the zucchini into thin rounds and chop the bell peppers into small pieces.
- Peel and finely grate the garlic, then mix it with olive oil in a small bowl.
- In a large bowl, combine the chopped vegetables with Kalamata olives, rosemary, and half of the garlic oil mixture. Season with salt and pepper.
- Season the salmon fillets with salt and pepper on both sides. Brush the remaining garlic oil mixture over the salmon.
- Preheat your air fryer to 180°C.
- Place the mixed vegetables in the air fryer basket and cook for about 15-20 minutes. After 5 minutes, carefully add the salmon fillets alongside the vegetables.
- Once everything is cooked through, plate the caramelized vegetables and flaky salmon. Drizzle generously with pesto and garnish with fresh basil leaves.
